Welcome to my Cookie Cups page! Here you'll find my favourite cookie cup recipes. All starting with a delicious cookie base filled with cheesecake, caramel, custard, or chocolate.

My most popular (and personal favourites) are my S'mores Cookie Cups that use a chocolate ganache filling with toasted marshmallow fluff in a graham cracker cookie shell. And my Apple Crisp Cookie Cups that use my favourite Oatmeal Cookie based filled with homemade apple pie filling.

All of my cookie cup recipes are for standard cupcake pans, but they can easily be converted to mini cupcake pans. All you need to do is reduce the baking time. I recommend checking at half the time recommended for the regular sized pans.

I find my cookie cups bake best in a dark cupcake pan that I spray lightly with a baking spray that has flour in it.

I use a large (3Tbsp) cookie scoop for the regular sized cupcake pans. To make the cookie cup itself, press a small jar (spice jars work for this) into the cookie as soon as it comes out of the oven.

I don't let mine cool completely in the pans as I find they start to stick. I remove them onto a cooling rack after they've cooled for 5mins or so.
