I do not deal well with change. I am a creature of habit, and any change in my routine causes stress and anxiety, so you can imagine what moving into a new house was like. Levels of excitement, anxiety, and exhaustion have left me feeling what I can best describe as jet-lagged for the past few days. Groggy, achy, and just off my game. Thankfully, I finally feel somewhat human again today.
The move went as smoothly as it could, really, which was a welcome change from our last one. The only damper on things (literally) was the afternoon downpour which we really could have done without. Our poor movers got so soaked! As did our boxes. Luckily, they had wrapped all of our furniture.
We’ve made a decent dent in unpacking the boxes so far, and the main rooms are set up. I still need to organize all my baking crap (SO MUCH OF IT) and my photography room, which is in need of some shelving and a table. I will post pics once it’s all set up! In the meantime, on to these Banana Pie Bites!
This is not a typical Liv for Cake recipe, but who am I to deny you something so easy and delicious? The inspiration for these Banana Pie Bites came from a recent post I saw for Banana Sushi. I did not know banana sushi was a thing, but there you have it. And apparently it’s popular!
Bananas wrapped in tortillas aren’t really my kinda thing though, so I thought I’d experiment a bit and try wrapping them in pre-made pie crusts before baking them. I expected it to be a pretty epic fail, to be honest, so I only baked up one little bite to see how it would turn out. While baking, the crust shrank a bit but the banana did not. Ugh. It did not look good.
Thankfully, after cooling just slightly on a baking sheet, the banana shrank and matched the pie crust perfectly. Success! The rest of the bites promptly went into the oven.
These Banana Pie Bites are super easy to make. Literally 10mins (tops) of prep time then just chill and bake. You can top with whatever you desire or leave them plain. I sprinkled some granulated sugar on top before baking and then drizzled with Nutella afterwards, but they would be just as delicious sprinkled with cinnamon sugar or dipped in chocolate. The possibilities are almost endless.

Banana Pie Bites
- 1 11″ pie crust store bought or homemade
- 3 bananas small
- 1 egg whisked with a bit of milk or water
- 1/4 cup Nutella warmed up
- Coarse sugar
- Cinnamon sugar
- Melted chocolate
- Unroll pie crust and cut in half. Wrap one banana in each half, trim excess and pinch to seal. Reroll scraps and wrap remaining banana.
- Cut into 1″ pieces and place on a parchment lined baking sheet.
- Refrigerate for 30mins.
- Preheat oven to 400F. Brush pie crusts with egg wash and sprinkle bananas with coarse sugar or cinnamon sugar if desired.
- Bake for 15-20mins or until golden. Broil for 2 mins if desired to caramelize sugar.
- Cool and drizzle with Nutella or melted chocolate if desired.
- Store in an airtight container in the fridge.
